Sea Glass at Inn by the Sea Recognized by Wine Spectator Magazine with Award of Excellence

Cape Elizabeth, Maine, April 25,  2010……… Sea Glass Restaurant at Inn by the Sea has again been awarded the prestigious Wine Spectator Magazine’s Award of Excellence for 2009 for the restaurant’s commitment to a fine and extensive wine list, announced Sara Masterson, the inn’s General Manager. Sea Glass offers guests over 200 labels in their wine cove, and thoughtfully matches wines in both price and thematic focus to their changing menus. Wines are selected from around the world, but local vineyards are also represented. The awards will be listed in the August 2010 Wine Spectator issues.

According to Wine Spectator magazine, restaurants are recognized if their wine selections offer interest, are appropriate to the menu selections, have broad appeal and also provide complete information to their clientele. Sea Glass has gone a step further in their ocean view restaurant, providing education and experience through a variety of wine dinners throughout the year.

Executive Chef Mitchell Kaldrovich celebrates all things Maine in Sea Glass with produce fresh from local farms and the sea. Whether dining Al Fresco on the outdoor decks or inside in the intimate dining room, the chef’s menus embody his passion for food and wine, resulting in an extensive collection of bottles on view in the wine cove. Guests are welcome to personally visit the cove before making a selection.

“I love to share my passion for food with others, and having a full and varied wine list adds to the culinary experience,” stated Kaldrovich. “We carefully generate a list to complement Sea Glass menus, and enhance taste by coaxing out mild flavors or adding to dominant flavors with contrast. Light and crisp for seafood, fuller and more robust for game or beef help create a complete experience.” said the chef.

Kaldrovich’s signature Maine Scallops on a bed of Parsnip Puree was greeted with rave reviews at the James Beard House in New York this winter when paired with an Oregon, Pinot Gris, Adelsheim 2007, which continues to be popular in Sea Glass.

“From the full bodied Bordeaux, Chateau Mouton, Rothschild, Pauillac 2003 to a light Vinho Verde, Aveleda from Portugal , to Serendipity, a Maine Maple Syrup infused Reisling, from Cellardoor Winery, the wine list caters to all tastes,” according to Kaldrovich.

About Chef Mitchell Kaldrovich:  The chef enjoys celebrating all things Maine in the new ocean view Sea Glass at Inn by the Sea, on Crescent Beach in Maine. American born, but raised in Argentina chef enjoyed cooking as a young boy under his  grandmother’s direction. His career began at Galani Restaurant, a Four Star restaurant in Buenos Aires. He then worked at the L’Orangerie Restaurant in West Hollywood, The Duck Club in Monterey, California, the La Palma D’Or in the Biltmore Hotel in Coral Gables Florida, and the Llao Llao Hotel & Resort in Patagonia. Prior to opening Sea Glass at Inn by the Sea in 2008, he was Executive Chef at Plump Jack Café in Squaw Valley California. The chef was invited to cook at the James Beard House in New York in 2010.  His menu, New England with a Twist featured fresh Maine ingredients including his signature Pan Seared Maine Sea Scallops, Lobster and Seafood Cerviche, Atlantic Cod and Lobster Chowder, and Cold Spring Farm Short Ribs, all complemented with wine pairings.

Panoramic ocean views with lobster boats bobbing on the horizon, this intimate restaurant opened in June 2008, and offers Chef Kaldrovich’s modern take on a seasonal Maine menu, using only the freshest local ingredients.  Dine Al Fresco on the deck on warm days, or enjoy the intimate dining room with a selection of over 200 different labels on view in the wine cove.
