Freshly reworked, legacy concepts make up Chef Chadwick’s summer menu in ocean view Sea Glass Restaurant. Simply put- If it isn’t a beloved summer dish, it didn’t make the menu. While the offerings are traditional, Chef Chadwick and his team add a modern spin by mixing it up with inventive takes on the classics.
“We keep it fresh in Sea Glass by creating a new menu four to five times a year with in- season ingredients. I decided to go back to basics for summer,” said Chef Chadwick. “I wanted to create a menu that focused on our guest’s favorite warm weather dishes, but that also delivered on the promise of a modern culinary experience with forward thinking, global flavors.”
When in Maine a Lobster dish is a must. Local Butter Poached Lobster is cooked in thyme and lobster stock served with Lobster Risotto prepared with wine and stock, shallots, tomatoes and finished with saffron and mascarpone, and a side of charred Broccolini.
A true summer classic, the Chef’s Surf and Turf option is a Tenderloin of Beef sourced from North East Family Farms served with a Jonah Crab Cake, roasted cauliflower, a white polenta created with cornmeal, milk, parmesan, onions and herbs, finished with a traditional Bearnaise sauce.
Tide to Table
Being on the coast fresh seafood is varied and abundant with many gifts from the sea such as Seared Salmon with Tabbouleh Salad, charred lemon and hummus or Swordfish with miso roasted eggplant with seared sushi rice. Chef’s signature Lobster tacos with radish, sweet chili and avocado mousse are perennial favorites, as are the Blackened Swordfish Tacos with shaved cabbage, cilantro, avocado mousse, sauce rojo, salsa verde and chipotle cream. For lighter fair the raw and cured Tuna with Sesame, coriander, caramelized onion puree, served with a rice cracker make up a delightful Tuna Variation. Six Oysters on the Half Shell round out guest favorites and are served with house made sauces including Bloody Mary or Blueberry flavors.
The classic Baby Wedge is updated with charred corn, roasted tomatoes, pancetta served with Blue Cheese. Cucumber Halloumi or Panzanella Salads with heirloom tomato, purslane, torn focaccia, smoked sunflower crunch, and basil puree both tap into fresh, local summer produce.

Definitely summer favorites with a craft cocktail on the deck, but the Chef’s spin is to stuff the chicken with more chicken and add a thigh meat croquette, while burger choices include an all-beef burger with onion jam, or a healthier, eco version that is 40% mushroom and oh so delicious!
