Chef Andrew Chadwick debuts his “Maine Made” menu at the James Beard House
in New York & a new Winter Menu in Sea Glass
Touting a brand new, regionally sourced winter menu in Sea Glass restaurant, Inn by the Sea’s Chef Andrew Chadwick is excited to announce he will bring that Taste of Maine to Manhattan when he debuts his “Maine Made” menu at the legendary James Beard House in New York on April 5. Both the Chefs winter menu and the Beard menu play homage to Maine farmers, foragers and fishermen.
“I am thrilled and honored to be invited to cook at the James Beard House in New York,” said Chef Chadwick. “To be part of that amazing legacy is a life goal for most chefs.” The Beard House menu will run side by side with the winter Sea Glass menu at the Inn from April 13-21.
The Chef finds inspiration from all that’s local, fusing regionally sourced ingredients with flavors borrowed from around the world. Chef Chadwick adds old world spices and modern plate presentations to traditional Maine fare to bring a signature dining experience to both Sea Glass and the Big Apple.
The simplicity of Maine food with the complexity of contemporary flavors and a commitment to seasonality are at the heart of all Chef Chadwick’s menus. The Beard House menu features Cape’s Alewives Farm Lobster Tail with Blueberry variations, Scarborough’s Nonesuch Oyster Stew, Chesterfield Maine’s pasture raised Buck’s Farm Braised Pork Cheek w Moxie BBQ & Kolrabi Slaw and slow Roasted Strip Loin w Artichoke & Casava Root. The evening starts with Chef’s signature Lobster Tacos w Serrano Jam, Gulf of Maine Whiting & Lobster Bratwurst, Seafood Escabeche and Char Sui Ribs with Scallion, & ends sweetly with a Maine Whoopie pie w Blueberry Gel.
The winter Sea Glass menu includes crisp Wedge with Quail Egg & Pork Rind or Roasted Carrot salads, a rich vegetable Minestrone broth poured at the table over fresh cut winter vegetables, Archer Farm Filet Mignon w smoked mushroom & cauliflower, Maine Scallops w Bay of Fundy northern shrimp and cous cous- or for simpler fare, a Sea Glass Burger with house cured bacon & blue cheese spread.
